Guest guest
This salad has a nice spice flavor to it; not hot though... Curried Couscous Salad 3/4 cup water 1/2 cup uncooked couscous 1 cup frozen peas, thawed 1 medium diced cucumber 1 large carrot, shredded 2 green onions, chopped 1 tsp parsley 1/4 cup soy Bacos [fake bacon bits] Dressing: 1/4 cup olive oil 1 Tbs. cider vinegar 1 Tbs. soy sauce 1 tsp. sucanat [or sugar] 1 tsp. curry powder In a small saucepan, bring water to a boil. Stir in couscous. Cover and remove pan from the heat; let stand for 5 minutes. Fluff with a fork. In a large bowl, combine the couscous, peas, cucumber, carrot, onions and parsley. Cover and refrigerate until chilled. In a jar with a tight-fitting lid, combine the dressing ingredients; shake well. Just before serving drizzle over salad and add the Bacos. Toss to combine. Yield: 4 servings ~ pt ~ We need a moral philosophy in which the concept of love, so rarely mentioned now by philosophers, can once again be made central. ~ Iris Murdoch (1919-)
