Guest guest Posted October 15, 2005 Report Share Posted October 15, 2005 I cook with Fava Beans occasionally, but what I like the most about them is their use in the garden. [i know, a little off topic] Here in Eureka CA they are a great winter cover crop and in the spring you have fava beans. They, being legumes, are nitrogen fixing, which helps the soil for other plants. They are used a lot in middle eastern cooking. There are folks who are violently allergic to them so be sure, if you serve at a potluck, that you announce their presence. They are not small, but usally pretty large. They can be a beige or pale green--I believe different varieties. They are normally considerably larger than pinto beans. Occasionally they can be small, but most I have raised are fairly large.
