My two favourites come from Barnard and Kramer's _The Garden of Vegan_ and this is the one I will make this morning - it goes well with chili sin carne, soups, stews, and is just lovely for a little snacking or for breakfast. It freezes well. OAT BREAD (Vegan) 2-1/2 cups flour (I use whole wheat usually, but you can use a little or all white) 1-1/2 tsp baking powder 1/8 tsp baking soda 1/2 tsp salt 3/4 cup rolled oat flakes (quick-cooking ones work fine too) 1-1/4 cups water 1/4 cup olive oil 1/4 cup maple syrup (use the real thing - the `flavoured' stuff is nasty) Preheat over to 350 degrees. Sift the dry ingredients, except for those oat flakes, together in a bowl, stirr in the oats, stir in the wet ingredients until they are `just mixed'.
