It is labor intensive but worth the effort for special meals. Not Your Mama's Meatloaf From " Vegan Vittles " by Joanne Stepaniak 1 recipe/4 cups ground seitan (see under the faux or fakes files) 2 tsp olive oil 1 large yellow onion, chopped 1 medium carrot, peeled and shredded 2 cloves garlic, minced or pressed 1 cup fresh, fresh whole grain bread crumbs, firmly packed 1/2 cup quick-cooking rolled oats (not instant) 1/3 cup smooth peanut butter (or other nut butter of choice) 1/3 cup ketchup 1 Tbs vegetwwarina Worcestershire sauce or soy sauce (or Braggs liquid aminos) 1/4 tsp ground black pepper 1/4 tsp dried thyme leaves, crumbles 1/4 cup minced fresh parsley (or 2 Tbs dried) 1/2 cup tomato sauce Heat oil in 10-inch skillet and saute onion and carrot until onion is translucent, about 6 - 8 minutes. Add garlic and saute for a minute longer, then remove from heat. Preheat oven to 350 degrees . Mist an 8 1/2 x 4 1/2 inch loaf pan with nonstick cooking spray and set aside. Combine ground seitan, bread crumbs, rolled oats and cooled sauted vegetables until thoroughly mixed. In another bowl combine all the other ingredients EXCEPT the parsley and tomato sauce. Stir vigorously until creamy and smooth. Combine with the seitan mix and the parsley. Pat the mixture info the prepared loaf pan. Spread tomato sauce evenly over the top. Bake for 1 1/4 hours. Remove onto cooling rack and let rest for 15 minutes. Serve warm or cold. Can be topped with ketchup, tomato sauce or gravy. I like to put mushrooms slices on top, too. This loaf can be cut into thick slices. Leftovers do well in sandwiches.
