Spicy Rustic Ranch Soup with Avocado Trim 3 quarts vegetable broth 1 whole garlic bulb flame roasted (blacken on stove, unpeeled) 1 medium onion cut into 4 large chunks 2 or 3 fresh jalapeno chiles, minced 2 large tomatoes, cored, seeded and diced salt, pepper and cumin to taste 1 carrot thinly sliced 2 celery stalks thinly sliced 1 15 ounce can of black beans, semi-drained Garnish with : 3/4 cup chopped cilantro 2 ripe avocados, diced 2 limes cut into slices To blacken garlic, insert a fork in top and turn over stove flame until outer skins are back. Instructions: Blacken garlic bulb over open stove flame and place in soup pot with onions and broth. Let simmer for 35 minutes. Add carrots and celery and simmer for another 15 minutes. Season broth with salt, pepper and cumin. Add black beans, tomatoes and jalapenos and simmer 10 minutes. Add a little extra broth or water if needed. Separate garlic bulb and divide cloves between bowls. Serve soup in bowls with garlic cloves and garnished with cilantro, avocado and squeeze limes over top.
