[recipe] Sugar And Spice Cookies

WARNING: This recipe has been known to cause a

serious cookie addiction. *lol*

The original cookie recipe had 3/4 cup shortening,

but i used applesauce in mine with great results.

Nice and spicy...makes the house smell wonderful, too.

 

Sugar And Spice Cookies

 

3/4 cup applesauce

1 cup sugar

1 egg

1/4 cup molasses

2 cups flour

1 tsp baking soda

1 1/2 tsp ground ginger

1 tsp ground cinnamon

3/4 tsp ground cloves

1/2 tsp salt

 

Lemon Frosting:

2 cups confectioners sugar

3 Tbs butter or margarine, softened

1 tsp grated lemon peel

3 to 4 tsp lemon juice

 

In a mixing bowl, mix applesauce and sugar.

Add egg; mix well. Beat in molasses.

Combine dry ingredients; add to wet mixture and

mix well. Drop by rounded teaspoonfuls onto

greased baking sheets. Bake at 350 for 8 to 10 minutes.

Remove to wire wracks; cool. For frosting, cream sugar,

butter and lemon peel in a mixing bowl. Gradually add

lemon juice, beating until frosting reaches desired

spreading consistency. Frost cookies.

Yield: about 4 1/2 dozen
