Squash or pumpkin receipe

This we do at home and most other homes in south india. Its called

pachadi or a type pf raitha( which it isnt except to the fact that

it uses yougurt).

 

Pachadi:

 

Any squash or pumpkin peeled and cubed

1 teaspoon of oil

1 tsp urad dhal

1 tsp mustard seeds

pinch of asfoetida

salt to taste

1- cup of plain yogurt( low fat or full fat according to choice)

spring of curry leaves

 

In a vessel heat the oil, add the urad dhal and mustard seeds and

let it splutter. add curry leaves and hing. Add the squash and cook

till its just done ( not mushy). add salt and mix well. allow to cool

 

 

For masala:

 

1-2 green chilies according to taste

1/2 tsp of mustard seeds

1/2 tsp of tumeric

handful of grated fresh coconut

handful of fresh cilantro

 

grind the above with a little water to make a smooth paste.

 

Add the above paste to the cooled squash and add yougurt( never add

yogurt to hot squash as it tends to curdle and turns sour) till it

is well mixed and has sort of a raitha consistency. Mix well , add

more yougurt if needed and taste for salt and adjust.

 

Serve it as a side dish to Chapathi or serve it with rice. its a

good way to get kids eat vegetables .

This can be done with radish, turnip,

cucumber,,cayote ,carrot,tomatoes and many other vegetables. if you

get bored of same color add red chilies instead of green and skip

the coriander. you have a red pachadi. you can take to picnics or to

work as you can add plain yougurt just before you eat. hence it wont

turn sour or spoil either.
