I have some lovely organic kale I got at the farmer's market yesterday - also those lovely white summer turnips, parsnips and tomatoes - other root veg in the fridge but short on green stuff until I shop later today. Shall report back later when I've considered this further. <puts thinking cap on> So, it makes me wonder what YOU guys have cooking at your house? Let's hear it! Are you cooking ahead for the week? Preparing a light lunch for the family? Planning dinner for guests? Hoping for a quiet snack by the TV all by your lonesome or with your s.o.? Over to you! I made my spicy squash soup (posted here a bit ago), some potato leek soup (from The Enchanted Broccoli Forest Moosewood Cookbook) plus, I made my trademark Egg Salad, and... a wonderful tofu stir fry! I can post the last three recipes, if anyone's interested... The only sad part is that I better not cook for the rest of the week!
