Guest guest Posted November 6, 2005 Report Share Posted November 6, 2005 I can tell you about yesterday. Here it was, Saturday lunchtime, and I was short on quick ideas and long on lazy. I had some beets I had cooked and sliced that I was going to make into soup maybe, but . . . So I dreamed up - BEET, SEAWEED AND APPLE SALAD (Vegan) About 1 bunch of beets, peeled ,cooked and sliced 1 large apple (I used a Macintosh), cored, quartered and sliced 2 Tbsp seaweed (I used cut wakame), soaked in hot water for 1/4 hr or so. 1/2 cup defrosted corn kernels homemade vinaigrette dressing, your choice of vinegars and herbs (I used white wine vinegar, a very little olive oil, a spoonful of dijon mustard, salt and pepper, no herbs) Place beets and apple in salad bowl. Squeeze water from seaweek and chop a little if necessary and add to bowl along with the corn. Toss with vinaigrette. Serve with other salads, pickles, breads, etc. It was a hit!
