Guest guest Posted November 8, 2005 Report Share Posted November 8, 2005 " Garlic Potato Spread " 1 large russet potato 6 cloves of garlic, chopped 3/4 cup of basil or cilantro sprigs 1/4 cup olive oil 2 Tblspns. fresh lemon juice salt cayenne pepper Boil potato in the peel until tender when pierced with a sharp knife, now don't let it get mushy!. When cooled, peel and mash. Meanwhile peel garlic. Discard basil or cilantro stems and chop leaves coarsely. Puree basil or cilantro and garlic with the oil until a paste forms. Stir blended mixture into mashed potato and season with lemon juice, salt and cayenne pepper. Spread this on rustic bread, pita chips or a steamed tortilla. It's way to good for words. Honestly!
