" Red Bell pepper and Walnut Pesto " 1/2 lb. red pepper 1 or 2 garlic cloves, chop 1/2 cup walnuts 3 Tblspns. olive oil 1/4 tsp chili powder (1/8 tsp.if you're a chicken like me) add dashes of oregano, basil or seasoned non-salt if you like salt Halve red pepper, seed and chop. Place in blender with walnuts, garlic and oil. Process until smooth. Season to taste with salt, chili powder and seasonings to taste. Place in bowl and garnish top with parsley, basil or cilantro leaves. Now you can spread this on bread, use as a dip or even toss with your favorite shaped pasta or spaghetti noodles.
