" Jicama Peanut Salad " 2 medium jicamas, peeled and sliced1 red or green bell pepper, cut in strips2 Tblspns. roasted peanuts1 Tblspn. fresh parsley or cilantro, chopped1/4 to 1/2 tsp. ground chile powderjuice of two limes1/2 tsp. salt Arrange the jicama on a platter with the bell pepper strips and the peanuts on top. Sprinkle with the parsley or cilantro, chile powder, lime juice, and sea salt and serve.
