" Country French Casserole " 1/2 lb. vegetarian sausage (Yves Brats or Tofurky Italian are good ones) 1 lb. can of kidney beans, rinsed and drained 1 lb. can of great northern beans, rinsed and drained 1 lb. can of black beans, rinsed drained 1 (15 oz,) can of tomato sauce 3 medium carrots thinly sliced 2 small onions cut into rings and separated 1/2 cup red wine (vegetable broth works too) 2 tblspns. brown sugar 3 to 5 cloves garlic, minced 1 1/2 tsps, dried thyme 1 tsp. dried terragon dash of salt and pepper Preheat oven to 375 degrees Cut sausages into rounds and combine all ingredients into an ungreased 3 quart baking dish. Cover and bake for one hour, until carrots are tender. Note* This casserole is very versitile.
