Refried Bean Soup recipe (soup not hot and spicy)

Wanted to post a most delicious soup recipe.

Here you go:

 

" Refried Bean Soup "

 

1 small onion, chopped

2 garlic cloves, minced

1 Tblsp. canola oil

1 can (31 oz) vegetarian refried beans

1 can diced stewed tomatoes undrained (16 oz)

1 can Rotel (they have spice) tomatoes undrained (16 oz)

1 can vegetable broth (14 1/2 0z)

 

Garnish options:

crushed tortilla chips,

shredded cheese

sour cream

chopped green onions

chopped cilantro

chopped radishes

pickled jalapeno slices

 

Saute onion and garlic in oil over medium heat until tender.

Add beans, broth,and both cans of tomatoes, stirring until smooth.

Make sure all lumps are out of beans.

Bring to a boil, reduce heat to very low simmer and cook for 15 mins.

Ladle into individual bowls and garnish as desired.

 

Now isn't that easy? No one will believe you spent this little bit of time

making this soup.
