Guest guest Posted November 17, 2005 Report Share Posted November 17, 2005 This is a super-quick dish and goes well with other spicy foods or as a sidedish to your favourite meatless patty. The grating can be done in the food processor and the cooking time is minimal. We had it for lunch yesterday! BEETS WITH MUSTARD SEEDS AND CHILLIES (VEGAN) 2 Tbsp oil 1/2 tsp brown mustard seeds 1/2 medium onion, finely chopped 1 or 2 fresh green chillies, finely chopped 1 lb beets, peeled and grated 1 tsp salt 1Tbsp fresh lemon juice. Put the mustad seeds into hot oil in skillet and, when they start to pop (stand back!), add the onion and the green chllies and stir for half a minute. Add the beets, stir for another minute and add salt and about half a cup of water. When it comes to the boil, cover the skillet and reduce heat to simmer for about 10 minutes.
