In Guanajuato, we are at about 7000 ft. altitude so it's a challenge baking and even making rice. I haven't figured out how to turn an egg either! That's amazing. I've tried different pans, sprays, oil, spatulas. It's got to be the altitude. The yolks always break and I've tried all different kinds of eggs. My husband says that soon I'll just have to walk by the bread dough with the yeast since there is so little needed. I have one recipe which works well and I haven't experiemented further. Right now I'm going to make a pot of Cafe' de la Olla.
