They were used as the " meat " in a dish I tried. Philly is a city with four (count 'em, 4) vegan Chinese restaurants plus a number of others that are vegetarian-friendly in the China town area downtown. (IPBN, Institute for Plant Based Nutrition at http://www.plantbased.org and the American Vegan Society at http://www.americanvegan.org held a joint vegetarian convention there during Chinese New Year in 2002. It was a great conference. The one in the recipe to which I posted a link was for Cantonese sweet and sour sauce, but one *could* conceivably use any kind of sauce unless one were a purist - szechuan, hunan, thai, hey - think about it! What these are, as you say, is the 'neat' of the dish - the rest is really up to the chef!
