Irish Colcannon

 

4 large potatoes, peeled and boiled

1/2 lb. kale or cabbage steamed and chopped

3 tbs butter

1/4 cup milk

2 tbs sour cream (optional)

1/4 onion, grated

1/2 tsp salt

 

Mash potatoes and stir in butter, salt, milk and sour cream until fluffy. Add

the kale and onion, and serve hot.

Oh *another* great way to take your kale, which is tastier and nicer than most

cabbage-y

things imho. Of course, it's also a nice way to take yer spuds. Maybe nice with,

say, spicy

bean and lentil patties?
