I know I can get a tad confused (heh heh heh!) now and then, but I don't remember this one and maybe that's because I almost never eat anything sweet. So I did a bit of a search and couldn't find it in the message archive or in the Files . . . (OK so the Files are still being checked and reorganized - I want to make sure that we have all those lovely spicy desserts, cookies, etc. together - anyway, I didn't find the lemon fire crisps you mention in any of the folders so far. I'll keep looking, but . . . ) Maybe you could post your version of the recipe????? It sounds as if it would be one of those things I would certainly try!!! I'm sure someone on this group will like them. LEMON FIRE CRISPS ================= (Yield: 6 dozen) Ingredients: ------------ 2 sticks butter or margarine, room temperature 1/2 cup sugar 1 tblsp lemon juice 2 tblsp grated lemon peel 1 egg 2 1/4 cups flour 1 tsp cayenne powder 1/4 tsp salt 1/4 tsp baking powder Instructions: ------------- Preheat oven to 400 degrees F. Cream the butter and sugar until light and fluffy. Add the lemon juice, lemon peel, and egg and beat well. Sift the dry ingredients together. Beat into the butter mixture. Place the mixture into a cookie press, and force the dough onto an ungreased cookie sheet. Bake for 8 minutes or until cookies are lightly browned. I don't have a cookie press so made small balls of about 1/2 teaspoon. They need to be pressed down to thin, small cookies, about 2 in. in diameter. If the dough gets too soft, put it in the refrigerator. Or make the small balls and put them in the refrigerator and they are very easy to pat down on the cookie sheet. The first taste is one of lemony-sweet, followed by a bit of spice. I made only 1/2 of the recipe using a full egg, of course. It made about 4 dozen small cookies.
