I assume it's a lot of work, so ... thank you. OK. I tried my first recipe from the group. I don't have a cookie press so I improvised on the Lemon Fire Crisps. Also I am in Mexico so we have limons rather than limes or lemons. They worked fine. Gotta think they are a combination anyway. I baked a few at a time doing something different for each. Finally I decided to make small balls of 1/2 teaspoon and refrigerate them for about 1/2 hr. It was hot in the kitchen. Then I was able to press them down easily into very thin 2 in. galletitas. I thought they were wonderful! At first there was the sweet lemon/lime taste followed by the little bit of spice. I think my Mexican friends will like them. My husband thought they were lovely when I gave him a plateful during a football game just now. He had the same reaction - first the sweet lime taste then the chile. But he hated it! What does he know? All the more for me! They seem too special to just sit and eat a plateful. Those of you who have enjoyed them - when do you like to serve them? Are they especially good with or after a certain meal? If I had a cookie press, would they be thicker? Are they intended to be thicker? I noticed that they don't spread out while baking when I just dropped small 1/2 teaspoonfuls on the cookie sheet. I like them very much. I would extend a personal thank you but can't find the recipe again, I had printed it the first time. And I'm glad I did. I'll get around to the other recipes. They are all mouth watering.
