Usually, they only have chicken broth in the soup--so you just need to ask about that. I rarely find a Chinese restaurant with vegetarian or vegan soup. I am very clear when I ask-- " is the soup made with chicken broth? " I have never been steered wrong--I would know within about 3-4 hours.. Chinese food does not usually have chicken broth in the sauces they put on stirred fried veggies and tofu--I always respect the Chinese restaurant entrepreneurs--they are practical and chicken broth is not necessary for flavor [we vegetarians all know this . I usually do not order fried rice--I am very suspicious of the one with vegetables only. I just order steamed rice to avoid that problem. My other suggest is to eat in college towns or near colleges and universities where there are lots of vegetarians. Kathleen M.
