I mix the El Burrito vegan soy taco filling with a can of beans (kidney, pinto, or black), a small can of tomato juice, maybe a little frozen corn, and lots and lots of chipotle powder, heat it up and pile it on mixed salad greens. I top with shredded cheese, tomato, olives, then a mixture of salsa and ranch dressing, then snip some cilantro and green onion tops over all. Super lunch or dinner!
