The heat and sweet combination really made for a good cake.

 

Chipotle Apple Pecan Cake

 

3 cups flour

2 tsps. gr. cinnamon

1 1/2 tsps. gr. nutmeg

1 tsp. baking soda

1 tsp. gr. chipotle pepper

3/4 tsp. gr. ginger

1/2 tsp. gr. white pepper

1/4 tsp. salt

1/8 tsp. gr. cloves

1 1/2 cups canola oil

1 3/4 cups sugar

3 eggs

1 Tbsp. vanilla

3 large sweet-tart apples peeled, and diced (3 cups)

1 cup chopped pecans (toasted)

1 recipe for Spicy caramel glaze (optional)

 

Preheat oven to 325 degrees. Lightly coat a bundt pan. In

a bowl combine: flour,cinnamon, nutmeg, baking soda,

chipotle, ginger, white pepper, salt and cloves, stir to mix and set aside.

In another mix bowl beat oil and sugar on medium speed until combined. Add

eggs one at a time and beat after each addition. Add vanilla and as much flour

mixture as you can. Stir in remaining flour mixture, apples and pecans. Spoon

batter into pan.

Bake 1 1/4 hrs. until wooden toothpick inserted near center comes

out clean. Cool 10 minutes and place on wire rack.

 

Spicy Caramel Glaze: Make while cake is baking.

In a saucepan combine 1/2 cup packed brown sugar,

1/4 cup butter. 1/4 cup whipping cream, and 1/2 tsp.

ground chipotle pepper. Bring to boiling, stirring

occasionally. Boil gently 2 mins. Remove from heat.

Stir in 1 tsp. vanilla. Let stand 1 1/4 hr. until slightly

thickened. Drizzle over warm cake.
