Spicy Sweet Potatoes

3 large sweet potatoes (not yams) peeled and cut in cubes (6 cups)

2 tablespoons canola oil

2 tablespoons brown sugar

1 to 1 1/2 tsps. chili powder

1/2 tsp. salt

1/4 tsp. cayenne pepper

In a large baggie or plastic container, toss the potato

cubes with the oil. Combine remaining ingredients and

shake to coat with spices.

Place in a 9 X 13 inch baking dish.

Bake uncovered in 400 degree preheated oven for 40 minutes.

Rotate potatoes every 15 minutes with large spoon.

I never eat sweet potatoes because I like more spice. I think I

would like this recipe.

I printed for my sister to see if she can make it for Christmas Eve.

I will be busy making other file recipes to take with me there.

I make a version of this minus the oil, using maple syrup instead

of brown sugar, and adding a little cumin (and cinnamon, but I'm

just weird like that). I made it for Thanksgiving, and I guess I

used a little too much chili powder, because my Dad asked me " can't

you taste that! " Woops. ;) Actually, I figured as much when I

was making it and tried to cover it up for the family's benefit,

with extra maple syrup, but to no avail.
