Guest guest Posted December 14, 2005 Report Share Posted December 14, 2005 When I make this I use the sea veggie broth posted in files. A good flavorful broth really adds to this rice dish. Bamboo Rice 1 cup jasmine or basmati rice 2 cups veggie broth 2 onions, cut in half and then thin slices 1 small can bamboo shoots, rinsed and drained 1 tsp. cooking sherry, mirin or rice vinegar 1 tsp. chili sauce (that one in the tall plastic bottle in Chinese rests.) 1 tsp. crystallized ginger, chopped finely Bring veggie broth to a boil, add rice, cover and simmer for 15 to 20 minutes. Meanwhile add 2 tsps. of oil to a skillet and saute onions for a few minutes, until they are crisp tender. Add balance of ingredients and cook 3 to 4 minutes.
