You can sub. the lemon for an orange (juice & rind). Good Day Sunshine Rutabagas and Carrots 5 carrots, peeled 1 rutabagas, peeled 1/2 cup veggie broth 1 tblspn. brown sugar 2 tblspns. butter or margarine squeeze of one lemon or 1 tblspn. lemon juice 1/2 tsp. grated lemon rind 1/4 tsp. dill weed dash of salt Cut carrots (in medium thick rounds) and rutabagas into medium small diced cubes. Place both in sauce pan and add broth (add a little more if needed). Bring to a boil and simmer for 15 to 20 minutes until tender. Don't drain. In a small saucepan add remaining indredients and cook over medium heat for about 3 minutes. Add to the carrots, rutabagas and broth mixture, and stir gently to mix. Cook uncovered for 3 to 4 more minutes as vegetables start to glaze. Carefully toss in pan. Serve.
