Quinoa recipe

I enjoy this recipe for quinoa. It isn't spicy but it is flavourful. The

source of this recipe is New Vegetarian Cuisine from Prevention Magazine. (

A very good book)

 

1 tbs olive oil

1 cup coarsely chopped zucchini

1 cup chopped celery

1 cup chopped scallions

4 cups of water

2 cups quinoa, rinsed and drained

1 cup canned chick peas, rinsed and drained

1 cup cheddar cheese

1/2 cup swiss cheese

1/4 cup seasoned dry bread crumbs

 

1. preheat oven to 350. Coat a 2 qt casserole with butter or oil

2. In a fry pan heat oil. Add the zucchini, celery and scallions. Cook,

stirring frequently for 3 to 4 minutes or until tender.

3. Stir in the water (I use vegetable stock for more flavour) quinoa, chick

peas, 3/4 cup of cheddar, 1/4 cup swiss. (I also add some cumin at this

stage for more flavour) Spoon into the casserole dish. Cover and bake for

45 minutes or until the liquid has been absorbed.

4. Sprinkle with the bread crumbs and remaining cheese. Bake uncovered for

an additional 15 minutes.

company as they offer organic quinoa at a reasonable price. Not all recipes

do you have any ideas how to make quinoa an interesting but fantastic dish ,

I usua.lly only add some mushrooms and onion , but I wanted to make it a

good food for non vegans and allow them to see what they have been missing
