Guest guest Posted December 21, 2005 Report Share Posted December 21, 2005 Fakey Cheezy Nutty Crumby Topping (Vegan) This is what we use instead of parmesan cheese for sprinkling on (that highly spiced of course) pasta.* 2 Tbsp ground almonds 2 Tbsp ground wholewheat crackers (soda crackers work fine too) 2 Tbsp nutritional yeast flakes 1/2 tsp oregano 1/2 tsp paprika a few grinds black pepper salt to taste I use a food processor grinder-upper, then mix everything together, taste for seasoning and then keep in an airtight jar in the fridge next to the soycheez slices. You can of course make it in larger quantities, but I keep varying the mix so it's good to make it a bit at a time. One mix uses no oregano but does add cayenne . . . *Note: It's good, btw. We have a hard time finding vegan paremezan here - now and then, but never when you want it - and I don't see the point of paying a bomb for what I don't enjoy anyhow. It has a cheezy flavour, but the paprika and oregano (or thyme or whatever one wants to use) give it a sort of cheese-log flavour (at least that's what it reminds me of).
