Guest guest
Wendy, TSP can be used just like TVP. (They are pretty interchangeable.) It comes in different sizes to replace burger crumbles and also larger bits of meat. You can use the smaller pieces wherever you would use hamburger, but you either have to reconstitute it first (by soaking it in boiling water for about 10 minutes) or cook it in liquid, eg. in chilis. I will post one hot and spicy recipe. I use TVP/TSP in other things, but not fitting the kind of recipes for this group. Ropa Vieja Modified to vegan - using shredded/ground beef analogue This is a dish common to the Spanish speaking parts of the Caribbean. The name means old clothes, and there are at least two versions of how it came to be named that way. One says that the shredded beef looks like tattered clothing, and the other (my favorite) suggests that you should only wear old clothes when you eat it, because it is so tasty that in your enthusiasm you will surely make a mess. 2 - 3 12 oz packages of vegan beef analog, preferably shredded (comes frozen) - or - tvp 1 large carrot, sliced 1 large turnip, peeled and diced 1 large onion, chopped 3 Tbs (45 ml) olive oil 3 cloves garlic, finely chopped 1 green bell pepper, seeded and chopped 1 tsp (5 ml) hot chili pepper flakes (or to taste) 2 cups (500 ml) chopped fresh or canned tomatoes 2 bay leaves 1/4 tsp (1 ml) ground cinnamon 1/8 tsp (0.5 ml) ground cloves 2 cups vegetable stock (or 2 vegetable bouillon cubes dissolved in 2 cups of water) Salt and freshly ground pepper to taste Heat the oil in a large heavy skillet and saute the onion, carrot, turnip, garlic, bell pepper, and chili pepper flakes until the onion is tender but not browned. Add the remaining ingredients and cook until thick and well blended. Add the shredded beef and the stock. The dish should be somewhat soupy but may be thickened with some bread crumbs if desired. Serves 6 to 8.
