Guest guest Posted January 9, 2006 Report Share Posted January 9, 2006 I made this recipe up the other day, it turned out very nicely and added bonus, a lot of beta-carotene and vitamins in this one. Peel one large butternut squash and cut into 1 inch cubes. Dice one large carrot, one medium onion, one roasted red pepper, and three chipotle chilis with their sauce. Put these in a large stock pot with 5 cups water, two bouillon cubes, a teaspoon cumin, a tablespoon garlic. Bring to a boil and cook until squash is tender, about 35 minutes. Run though a food processor or blender in batches until very smooth, and then return to stock pot. Return to a boil, adding water, salt and pepper to get consistency and taste to your liking.
