I made these tonight and they are a KEEPER!

Cajun Style Baked Sweet Potato

Yields: 4 servings

 

INGREDIENTS:

1 1/2 teaspoons paprika

1 teaspoon brown sugar

1/4 teaspoon black pepper

1/4 teaspoon onion powder

1/4 teaspoon dried thyme

1/4 teaspoon dried rosemary

1/4 teaspoon garlic powder

1/4 teaspoon cayenne or other hot pepper spice (I used red pepper)

2 large sweet potato, peeled and cut into large cubes

1 1/2 teaspoons olive oil

 

DIRECTIONS:

1.Preheat oven to 375 degrees F (190 degrees C).

2.In a small bowl, stir together paprika, brown sugar, black pepper, onion

powder, thyme, rosemary, garlic powder, and cayenne pepper.

3.Slice the sweet potatoes in half lengthwise, cut into chunks. Put into a large

gallon size bag with the olive oil, shake and smoosh around to coat the

potatoes. Pour the seasoning mix into the bag and shake it all up. Place sweet

potatoes in a covered dish..

4.Bake in preheated oven until tender, or about 1 hour.

Hi all,

I dnt think its new to anyone but am making it a try

 

Green Papaya Salad

1/2 cup green papaya,shredded in the larger whole of the grater

2 avocados cubed

1 cup shredded carrot on the larger holes of the grater2tbsp lime

leaves(optional)

1 tbsp lemon grass,finely chopped

1/2 cup diced red bell pepper

1/4 cup red onion

1/2cup cucumber unpeeled

1/2 cup cilantro,chopped (optional)

1 cup fresh mint,chopped

1/2 cup fresh basil,chopped

1 tbsp curry chutney

1tbsp minced garlic

1/2 tbspminced ginger

dash of cayenne(depends on how hot you prefer to taste)

2/3 cup olive oil

1/4 cup freshly squezzed lime juice

soya sauce

*Mix and Munch!

*curry chutney* 1/2 cup yellow or golden curry

1/2 cup sun dried lime (grind)

Store in a tightly sealed jar for bout and hour, in a fridge then serve
