Tami Cajun Style Baked Sweet Potato Yields: 4 servings INGREDIENTS: 1 1/2 teaspoons paprika 1 teaspoon brown sugar 1/4 teaspoon black pepper 1/4 teaspoon onion powder 1/4 teaspoon dried thyme 1/4 teaspoon dried rosemary 1/4 teaspoon garlic powder 1/4 teaspoon cayenne or other hot pepper spice (I used red pepper) 2 large sweet potato, peeled and cut into large cubes 1 1/2 teaspoons olive oil DIRECTIONS: 1.Preheat oven to 375 degrees F (190 degrees C). 2.In a small bowl, stir together paprika, brown sugar, black pepper, onion powder, thyme, rosemary, garlic powder, and cayenne pepper. 3.Slice the sweet potatoes in half lengthwise, cut into chunks. Put into a large gallon size bag with the olive oil, shake and smoosh around to coat the potatoes. Pour the seasoning mix into the bag and shake it all up.
