recipe correction: Unchicken Satay

Add 1/4 tsp ground ginger to the marinade ingredients.

 

Unchicken Satay

 

1 pkg Lightlife Smart Strips Chick'n Strips or other chicken analogue

cut into strips

1 recipe brown rice

 

marinade:

 

1 tsp black pepper

1/2 - 1 tsp cumin

1 tsp ground coriander

1/2 tsp tumeric

1/4 tsp ground ginger

1 tsp chopped garlic

1 tsp agave syrup or unrefined sugar

1 Tbs vegetable oil

1 Tbs Bragg Liquid Aminos or soy sauce

1 Tbs lemon juice

bamboo skewers

1/2 green pepper, cut in chunks

grape tomatoes

 

sauce:

 

1/2 cup natural chunky peanut butter

1/2 cup vanilla soy yogurt

1/4 cup water

2 Tbs Bragg Liquid Aminos or soy sauce

1/4 tsp cayenne pepper

1/4 cup sliced green onion or scallions

 

Start rice cooking. In the meantime, mix the dry marinade ingredients

in a small bowl, then add the liquid ingredients and stir. Put the fake

chicken and green pepper into the marinade, getting all the pieces

covered. Stir occasionally while preparing the sauce.

 

Combine all the sauce ingredients, except the green onions. Heat over

medium heat in a small saucepan, whisking to combine the ingredients.

Add the green onions. Set aside.

 

When the rice is almost ready, string the marinated chicken onto the

skewers, alternating with marinated green pepper and the small tomatoes.

Lay the skewers on a broiling pan. Broil about 5 - 10 minutes on each

side. (I did this in a toaster oven using the convection broil option.)

 

Just before serving, reheat the sauce. Put skewers on top of the cooked

rice. Dribble sauce over each skewer.
