It's very fast to make, and the best part is that it's vegan and can be adapted to different tastes. Take a package of chicken seitan, cut it up, and cook it in a wok or pan with red curry powder, garlic, cumin, and some tumeric seasonings. In a separate pot, cook a package of frozen veggies (I used a Chinese assortment) in soymilk, red curry, tumeric, cumin, and garlic. Ideally you'd want to add this mixture to basmati rice or couscous. I didn't have time to prepare either and felt like making it with pasta. Strangely enough, came out quite well. Also, I didn't have coconut milk on hand, and you can use that instead of soymilk. Red wines go best with this dish. I had some merlot with it, but I think shiraz would've been better. YMMV.
