Spicy Indian chicken seitan and vegetables

I sorta winged this one last night, and it came out great! It's very

fast to make, and the best part is that it's vegan and can be adapted to

different tastes.

 

 

Take a package of chicken seitan, cut it up, and cook it in a wok or

pan with red curry powder, garlic, cumin, and some tumeric seasonings.

 

In a separate pot, cook a package of frozen veggies (I used a Chinese

assortment) in soymilk, red curry, tumeric, cumin, and garlic.

 

Ideally you'd want to add this mixture to basmati rice or couscous. I

didn't have time to prepare either and felt like making it with pasta.

Strangely enough, came out quite well. :) Also, I didn't have

coconut milk on hand, and you can use that instead of soymilk.

 

Red wines go best with this dish. I had some merlot with it, but I

think shiraz would've been better. YMMV. :)
