I don't measure in cups, for example, but weigh things on my kitchen scales . . . Best love, Pat Produce----Yield Here are some amounts for some common produce items! Produce Yields 1 medium onion 1/2 to 2/3 cups chopped 1 medium pepper 3/4 to 1 cup chopped 1 medium cucumber 1-1/2 cups sliced or chopped 1 medium apple 3/4 cup diced, or 1 cup chopped or sliced 3 medium apples 1 pound 1 medium potato 1 cup cubed, or 1/2 cup mashed 3 medium potatoes 1 pound 3 medium carrots 1-1/2 cups diced or sliced 1 medium head leaf lettuce 4 to 6 cups torn up 1 pound broccoli 3-1/2 cups florets 1 pound green beans 4 cups trimmed Source: Taste of Home's Cooking for 2 Magazine (Winter, 2006) Quote Link to comment Share on other sites More sharing options...
