Avocados have a velvety texture and a rich flavor. They are nutrient-dense, packed with vitamins A, C, and E, as well as potassium, fiber, and iron. In this recipe, freshly sliced avocados and ripe tomatoes are enhanced with a garlic-olive spread, resulting in an outstandingly mouth-watering combination. Feel free to garnish it with sprouts, onions, or lettuce. Ingredients: <http://m1e.net/c?41424317-iLZHkomNfBQ1g%401468380-2pGM2zQOf.l1I> 1 cup olives, green or black 2-4 Tbs. extra virgin olive oil chopped garlic (to taste) salt and pepper (to taste) 1 small ripe tomato 1 ripe avocado, peeled and pitted 2 slices whole wheat bread or whole wheat roll Directions: 1. Put olives, garlic, olive oil, salt and pepper into blender. 2. Blend into a paste; adjust garlic, oil, salt and pepper to your liking. 3. Toast bread if desired and spread paste onto it. 4. Slice avocado and place on bread. 5. Slice tomato and place between avocado and spread. 6. Close sandwich and serve.
