They are more or less for a garnish. I wouldn't make a meal of fried

rick stick noodles. I usually just fry a few to garnish a dish.

Not really. Although maybe *you* wouldn't make a whole meal of crispy deep-fried

noodles, there are dishes which use them entirely, rather than as a garnish, for

the noodle

part of the dish. I mentioned mee krob (Thai sweet-sour-salt crispy noodle

dish), which

would not be the whole meal but would be one dish out of several, in the usual

asian

manner, served up for a meal. You know this dish? Oh, you have to try it at

least once! LOL

These are rice stick noodles, deep fried, drained, and then the other bits and

pieces

(depending on whether it's veggie or carnivore) are cooked, sauced, etc., and

served mixed

with and over the noodles.

 

Agreed, in many stir-fried dishes of Chinese provenance the crispy deep-fried

noodles are

used as a garnish only. That's different ;-) And for a garnish? Well, they look

nice, they

crunch nicely, and they're fun. I can give them a big miss, but that's a matter

of the deep

frying and my way of avoiding it.
