I was thinking of making homemade root beer at some point. Anyway, it appears that in Trinidad, they make drinks from lots of things like kelp, sorrel, mushrooms, sea moss and mauby tree, which would be my guess on where Maida's drink came from although I may be wrong. They make roti, which are like giant burritos, with a spongy bread reminiscent of the bread in Ethiopian cuisine. (Mine was filled with curried potatoes, spinach, and channa - a spicy chick pea stew.) I tried their homemade bark drink. It tasted like a slightly spicy root beer to me. I asked what kind of tree bark they used and they said they could use any kind of tree. I would not ordinarily think of this as spicy, but is was aromatic.
