OT: Recipe Request: Hot Pepper Freezer Jelly?

Wow, I can see that I'm not getting all of my messages via email. I

didn't get Maida's. Maida, I checked the Certo ingredients, and I'm

confused about which one isn't vegetarian.

 

Ingredients: WATER, FRUIT PECTIN, LACTIC ACID AND CITRIC ACID (ASSIST

GEL), POTASSIUM CITRATE (CONTROLS ACIDITY), SODIUM BENZOATE (PRESERVATIVE).

 

After Googling the ingredients, the only indgredient above that I

could find being possibly animal-derived would be lactic

acid. Occasionally it is made from milk, but according to Wikipedia,

" Lactic acid is used in a variety of foodstuffs to act as an acidity

regulator. Although it can be fermented from lactose (milk sugar),

most commercially used lactic acid is derived by using bacteria such

as Bascillus acidilacti, Lactobascillus delbueckii or L.

bulgaricuswhey to ferment carbohydrates from sources such as

cornstarch, potatoes or molasses. Thus, although it is commonly known

as " milk acid " , products claiming to be vegetarian or vegan do

sometimes feature lactic acid as an ingredient. " Even if it would be

milk-derived, lactic acid would still be vegetarian, I believe.

 

I checked this website for ingredients that could be animal-derived,

and lactic acid was the only one listed. (

I also noticed that PETA has Sure-Jell on their list of approved ingredients.

 

Anyway, if you have other information, Maida, would you mind letting

me know? Thanks :-)

 

Pat, hot pepper jelly is exactly what it sounds like -- usually an

apple juice-based jelly with minced jalepenos, habaneros, or other

peppers in it. It gives you a wonderful sweet-hot hit. One common

way of using it is to spread cream cheese on a cracker and top it

with the jelly, but it's pretty versatile for all sorts of sweet or

savory things. It's in markets here, but I'd like to make my own, so

I can regulate the heat (in other words, make it hotter!).
