Well, there's been no criticism of anyone posting anything to the list recently for not being vegetarian - those who infer criticism from a timely warning that something is NOT vegetarian are mistaken. That's true. We assume *vegetarian* versions of these in recipes. The case of specifying a certain *brand* however is a little different. In making jams and jellies one must of course specify brand (because a recipe that works for one brand may not work for a substitute). The brands named were very suspect (according to the manufacturer) and therefore the list was informed. Some brands of yoghurt do indeed contain gelatin, many cheese contain rennet, etc. etc. But unless the brand is specified, we assume the *vegetarian* version ;-) > Citric acid and lactic acid, among other things, are in > many foods these days. As for the rest of your post, your suggestions for the reorganization of the files and the running of the list will be answered off list, as is only proper. Thanks for writing in. Sometimes threads take off in slightly different directions than the original poster thought they might :-) That is to be expected. And I wish I could help you with the jams and jellies (and I don't conrfuse 'jelly' with the brandname 'Jello'), but I really do stay away from them for other reasons than those under discussion here. Others might be able to help. It's a tad off topic for this list, of course, but I'm sure no one would mind if a nice recipe were posted - we all like nice recipes that others recommend.
