Guest guest
I do keep jalapenos in, but my all time favourite chili pepper has long been what our local grocers just call 'thai chili' - it is the tiniest and hottest of the thai chilies and if I'm lucky I can find a mix of green and red, although most for sale seem to be red. When I refer to chilies in my recipes, I'm usually referring to these, unless I specify otherwise. This is what one website has to say (for more, click into the link below): " There are so many types of chili pepper in Thailand. Different ones are used for different dishes. " The most famous one must be 'prig kee nu'. It's a very short, small green and red pepper. It is about one inch in length. It is the hottest of the pepper family. . . There are illustrations and more info at: http://www.thaitable.com/Thai/ingredients/thai_chili_pepper.htm (Note: This is not a vegetarian site.)
