I found this recipe while playing an online recipe swap game at www.recipezaar.com. It is NOT a vegetarian site but has many vegetarian & vegan recipes. In fact, the last game I played, there was a woman who is vegetarian on my team. Actually, she's from Manhattan & we've met a couple of times - once for dinner & she came to see my daughter dance in the Nutcracker. Way cool. Anyways...I LOVE this hot chocolate recipe & the submitter of this recipe has become a friend of mine, too. (cooks are so friendly!) I sometimes soak an ancho pepper in boiling water, then use that water for the 3/4c mentioned in the ingredient list. MMMMMmmmmmmmmmmmmmm....... Bethie Easy Hot Spiced Mexican Hot Chocolate Recipe #139630 This recipe is from Easy Entertaining with Michael Chiarello on Food Network. You may make this ahead and reheat. Make sure to either whisk it or blend it in a blender to make it light and foamy before serving. 3/4 cup water 1 vanilla bean or 1 teaspoon vanilla extract 3/4 cup sugar 1 teaspoon ground cinnamon 1 tablespoon instant espresso 1 pinch salt 2 1/2 ounces bittersweet chocolate, the best quality possible, grated 2 cups whole milk chili powder 4 servings Change size or US/metric Change to: [input] servings [input] US [input] Metric [input] [input] 10 minutes 5 mins prep Bring water to a boil in a saucepan. Split the vanilla bean and add to the boiling water. Add sugar, cinnamon, espresso, and a pinch of salt. Simmer for 1 minute and add the bittersweet chocolate. Whisk until it gets thick. Add milk and simmer 1 minute. Serve immediately with sprinkling of chili powder on top, and you can add a dollop of vanilla ice cream if you wish.
