Guest guest Posted April 21, 2006 Report Share Posted April 21, 2006 MARY’S SWEET AND SPICY CHILI 2 Tbsp olive oil 1 ½ cups onion, chopped 1 cup bell pepper, chopped (any color) 1 cup carrots, chopped 1 cup celery, chopped 2 large portabello mushroom caps, chopped 1 tsp kosher salt ½ tsp ground black pepper Heat oil in 8 quart stock pot. Add vegetables. Sauté until soft, stirring occasionally (about 15 minutes). Add additional oil if necessary. Alternatively, you can add ½ cup water and steam the vegetables until softened. 6-8 cloves garlic, chopped 1 (16 ounce) jar SWEET red peppers, chopped --aka sandwich toppers. Add to vegetables. Sauté, stirring until garlic starts to soften. Be careful not to burn it. 1 (6 ounce) can tomato paste Stir into vegetables. Cook for about 1 minute. 4 (14.5 ounce) cans petite diced tomatoes 8 cups veggie stock or water 2 (12 ounce) packages Morningstar Farms Sausage Style Recipe Crumbles meat substitute 1 ½ - 3 Tbsp ground chili powder-or to taste 1 Tbsp ground chipotle chili powder 1 Tbsp ground cumin 1 tsp ground cinnamon ¼ tsp ground nutmeg ½ tsp kosher salt ¼ tsp ground black pepper ½ cup Brown Sugar Splenda 2 Tbsp unsweetened cocoa 2 Tbsp instant coffee or decaf Stir into vegetables. Bring to boil. Reduce heat to low simmer. Simmer until reaches desired consistency-about 1 ½ to 2 hours, stirring occasionally. You can cook this over a higher flame to cook faster, however, you will have to watch it to prevent sticking and splattering. This should be on the watery side because the couscous will absorb at least a cup of the liquid. 1 can (16 ounce) red kidney beans, drained and rinsed ½ cup couscous ¼ cup flax seeds (optional) ¼ cup sunflower seeds Stir into chili. Cover. Turn off heat. Allow to rest covered for 15 minutes. Stir. Add more salt and pepper if necessary to adjust to taste. Serve with any of the following garnishes: Sliced jalapeno rings Chopped canned green chilies Raisins Chocolate or carob chips Chopped peanuts Trail mix Shredded coconut Notes: If you don’t have Brown Sugar Splenda, you can substitute ½ cup regular Splenda plus 1 Tbsp sugar-free maple syrup. You can also use regular brown sugar. Hint: Hate fighting to scoop tomato paste out of the can? Open the can and remove lid. Then, turn the can over and open the bottom.
