First I boil a packet of ramen noodles in vegetable broth, leaving out the seasoning packet that typically comes with those noodles. Then I toss in some sliced scallions, about two or three depending upon their size, some snow peas [a palmful or quarter cup?], and if I have any, some sliced fresh mushrooms [again, about a palmful]. I let all of this cook down a bit to reduce the liquid; takes all of three minutes I think. At the end I stir in several spoonfuls of natural peanut butter which probably measures out to be 3 tablespoons give or take. Finally, several generous squirts of sriracha hot sauce and a pinch of red pepper flakes. I have never measured the hot sauce, but if pressed to come up with a unit of measure, I'd have to guess it is close to two tablespoons. I will eat this hot in the cooler weather but I also enjoy it served cold on a bed of fresh spinach leaves or sliced deseeded cucumber. I hope you all will enjoy trying this dish. If it isn't proper enough to be placed in the files here as I have typed it then I understand and it is of no consequence to me.
