Guest guest Posted May 25, 2006 Report Share Posted May 25, 2006 QUICK SPINACH WITH BROWNED ONIONS - INDIA (Vegan) This is my QuickFix adaptation of a Musalmani dish from North India. I had some caramelized oniions in the freezer and a package of chopped frozen spinach - not a very inspiring duo of ingredients for a luncheon sidedish. It would no doubt be better with fresh spinach and freshly browned onions, but when you're in a hurry. . . . 1 pkg chopped frozen spinach, defrosted caramelized (or browned only,whatever you have) onions equal to a large onion 1 or 2 tsp oil - to brown the onions 1 pinch of chile flakes to taste 1 tsp salt or to taste After browning the onions (if you're doing them fresh) in the oil, add the chile flakes and stir. Then add the spinach and salt and stir very well. Lower heat and simmer to meld the flavours for 10 mins or so. Taste for seasoning and serve with whatever you please, Indian or western food. (We had it with some beans done Indian style, leftover from a different day, some leftover basmati rice and a quick tomato and chopped onion `salad' with garam masala and lemon juice.)
