Soak 1c dried chick peas over night till they're soft. (Optional: mix fava and chick pea.) Drain and grind in a blender (or, better, meat grinder) together with a bit of onion, crushed garlic, lots of salt, dash of black pepper, 1T ground cumin and coriander, pinch of baking soda. Add in a tiny amount of flour to help them stick together. Form into balls or patties. Deep fry or pan fry in hot oil. (If the oil isn't sufficiently hot they'll absorb it and be greasy.) Serve with pita, tahini and chile sauce, and shredded lettuce and pickled peppers. Hmmm. 2) " Foul. " Take a can of kidney beans and drain. Mash and then add crushed garlic, olive oil, oregano, salt, pepper, cumin, turmeric. 3) Humous. Drain a can of chick peas, mash and add above spices along with some sesame butter (tahini). 4) Roast eggplant spread. Roast an eggplant on the grill or roast an eggplant in the oven till the skin is burned and black and it looks wrinkled. (Puncture skin to keep it from exploding.) Peel skin off, revealing the moist lucious eggplant in side. Mash this up and season like humous and foul above. My mouth is watering! 5) Mix up some zahat spice mix (grind thyme, sumak, sesame seeds, paprika, and a bit of salt, pepper, cumin, corriander) and place on garlic bread with olive oil roasted in oven. If you try any and find them good, please let us know so that we can add your new faves to the Files! (If they're 'hot and spicy' we'll add them to the regular recipe files; if they're good but not particularly spicy, we'll add them to the OT (as in Off Topic) recipe file - can't quite remember what we're calling that these days. There's a great tradition of vegan food in Egypt, so there should be lots and lots out there for you to try. We need more of them in our Files too so, as I say, let's see if we can add some. Okay?
