Very low fat, low sodium, cholesterol free! Vegan! serves: 4 - 6 Cook time: 2 hours Prep Time: 20 min. (1 cup = 8 oz.) Ingredients: 1 cup brown lentils 1 stalk of leek [a.k.a. poireau] - including greens (chopped) 1/2 med-large onion (finely chopped) 1 carrot (finely chopped) 4 med. red tomatoes (chopped into large pieces) 4-6 med/large white mushrooms 1/2 cup frozen spinach 1/2 cup frozen peas 2 cups water 1/4 cup olive oil 1/4 cup soy milk 2 tablespoons soy sauce 2 Tablespoons chili powder 1 Tablespoon garlic powder 1 Tablespoon ginger powder 2 teaspoons tarragon 1 teaspoon basil 1 teaspoon sesame seed 1/2 teaspoon cinnamon powder pinch or two of sugar parsley, to taste Directions: Throw it all in a big pot, cover (allow a little ventilation) Simmer on low heat for 2 hours, stirring occasionally serve alone, OR over large noodles (like bow ties/papillion, penne, etc.) or your favorite rice.
