Guest guest Posted July 11, 2006 Report Share Posted July 11, 2006 Ginger-Date Cookies Sugar and spice and everything nice! Super easy and quick to make. Very low fat, low sodium, no cholesterol. Vegan! Makes: about 16 small cookies Cooking time: 13-15 min. Prep time: about 10 min. (1 cup = 8 oz.) Ingredients: 1/2 cup rice flour 1/2 cup wheat flour 3/4 cup sugar 1/2 cup chopped dates 2 Tablespoons oil 2 Tablespoons hot water 1 teaspoon ginger powder 1/2 teaspoon baking soda Directions: 1.) Mix it all up in a bowl 2.) Scoop teaspoon sized chunks of the batter, gently roll into little balls 3.) Place the balls on a lightly greased nonstick baking tray, press down a little (Before baking, sprinkle extra ginger on top, if you want them extra spicy!) 4.) Bake at 390°F (200° C) for 13-15 min. (until pale brown) 5.)
