Understood :-) OK then, looking through our files I see that we have one (count it - ONE!) recipe for you: Look in the Files under Main Courses and Side > Everyone, I am looking for a really good Red Thai Curry recipe....something > like what is found at your favorite Thai restaurant. Dishes, then scroll down to Asian - Southeast . . . and at or near the botton there is a vegetable curry that fits the bill. It can be made, the cook has said, as a red, green or yellow Thai curry. My note to you: I don't use Thai curry powder (I avoid curry powders in general except when a little is added to western dishes, as in fake-chikken sannies) but I DO certainly use Thai curry pastes - and the red ones I find especially good. You will have to adjust the amount to use, of course, according to taste. And saying that I add that all Thai curry pastes are not of the same 'heat' (as from one who eats very hot food herself but has been made to suffer from one particular brand I now forget!). ALSO (and forgive the shout) do NOT forget to check for ingredients. Many Thai curry pastes have fish sauce or fish paste or prawn or shrimp or some other such little creature in them - but several do not and you will just need to check the ingredients :-) If you worry about 'cheating' on ingredients by using this curry paste or sauce (or powder), sad to say most restaurants do that these days too.
