This is a really delicious way to serve aubergine (eggplant) and I have successfully fed it to people who were convinced that they hated this vegetable. They even came back for seconds. Honey Spiced Aubergine (Eggplant) 2 sliced aubergine 2 cloves garlic chopped and crushed Enough olive oil to fry the aubergine A generous chunk of fresh ginger peeled and grated Juice of 1 lemon ( juice of half may be enough if it is a big one) About 6 soup spoonfuls of runny honey or a very generous squirt from the bottle About 1½ coffee spoons of cumin seeds Brown the slices of aubergine in the olive oil either in a pan on top of the stove or for a short while in a hot oven. Then set aside. In a large pan on top of the stove briefly fry the garlic in a little olive oil. Add the ginger, lemon juice, honey and cumin. Stir well for a minute or two. Add the aubergine to the pan. Pour on a little water to prevent sticking. Stir well and taste to check seasoning. You may want to add a little more honey if your lemon was very juicy or a little more cumin for personal taste. Cover the pan and cook over a gentle heat for 10 to 20 minutes until the aubergine is soft and starting to break down. Makes a great side dish to many meals.
