Eggplant Bharta and Recipe for it

Hello Everyone!

I have to say that I love Indian food. I saw the bit about the Eggplant

Bharta that Nannushka sent in and got curious for a recipe to make it at home,

seeing as I have never had it, I didnt know what to really expect. So this

is what I found and thanks so much Nannushka for the yummy idea! ... another

wonderful sounding recipe to add to my Indian collection already. Also the

other spices that she added in would be really great in this dish... so add

them

in as you like to create a fuller flavoured meal. You can mix it and match

it around to your own taste. I can not wait to try this. The recipe I found

follows..

EGGPLANT BHARTA

 

2 md Eggplants, halved

1/2 c Finely chopped onion

2 Green chilies, chopped

1/4 ts Salt

1/4 c Cilantro, chopped

1 tb Ghee

1/2 ts Oil

 

Rub the ghee over the cut side of the eggplant. Roast until the skin is

lightly burned. The eggplant should be completely soft & tender. Peel & mash

the pulp with a potato masher. Mix well with onion, chilis, salt, cilantro &

oil. Fry in a skillet with a little oil for 3 to 5 minutes. The mixture

should be fairly dry.

Serve alone or with Rice.

Am new to the group and trying to take it all in.

Interesting group and am glad I found you all.

Bharta is almost always made with roasted eggplant. In

India, it is roasted on an open fire, pierced with a

skewer to let the steam out. I've done it successfully

under a hot grill in a conventional oven. Once done,

it is skinned and mashed. I know 2 ways of making a

bharta. One is more of a salad or a side dish. It

contains raw finely chopped onions and tomatoes, green

chillies, fresh coriander, topped with a tempering of

oil, mustard seeds, asafoetida and turmeric. This is

sometimes mixed with a little yoghurt, especially in

the summer. The other version is the curried version,

cooked with onions, tomatoes, and peas.
